A good diet promotes health, energy and vitality, and prevents disease. Most Americans are deficient in nutrients that are essential for health, which over time causes progressive metabolic or degenerative-type diseases. The brain and body are frequently malnourished.

Chemistry and synthetics are the base of food science today. People are eating many chemicals in processed, or invented, non-foods today—disguised and sold as food. You are actually starving the body when you consume invented foods, super refined foods, foods adulterated with artificial chemicals, over processed or refined foods, etc. These invented foods have little or no nutrition in them, but make you think you are being fed. It is called "full belly starvation."

An effective answer to nutritional malnourishment is whole food complexes, which contain live nutrients. Nutritional researchers say there are three juices at the base of an effective food juice program: Carrot juice, beet juice, and a green vegetable juice (barley juice). You can add to this broccoli, cabbage, tomato, kelp, etc; if not fresh then dried. There are several good brands and Garden Variety is one of these. Barley Grass is a green grass that has a very wide range of nutrients good for all ages. When they are harvested at a young age they contain higher levels of nutrients. Barley juice is alkaline and balances the tendency to eat too much acidic food. It is high in potassium, calcium, and chlorophyll (to cleanse the body). It is rich in vitamin C complex, iron, calcium, protein, and it has a multitude of enzymes (the body's spark plugs, necessary for essential chemical reaction, digestion, and cellular energy). Barley juice is full of nutrients and life!

Carrots contain many important nutrients like beta-carotene, B and C vitamins, calcium, and potassium. Beta carotene is changed by the body into vitamin A, which is important for the immune system, and it promotes healthy growth of cells. It is also an antioxidant to protect DNA mutation, lipid (fat) oxidation, and cell damage from free radicals.

Carrots also have another important carotenoids called alpha-carotene, which some feel is even more powerful than beta-carotene in inhibiting processes toward tumor growth.

Carrots are very rich in enzymes, as are fresh vegetables in general. Enzymes are catalysts for hundreds of thousands of chemical reactions that occur throughout the body. They are needed for digestion, for the absorption of food, and the production of cellular energy. Enzymes are essential for most of the building and repairing in the body and its processes, and this is the reason raw foods and juices are very important for good health.

A moderate amount of glutathione is in carrots.  This helps to recycle vitamin E and increase the body's production of white blood cells, as well as to strengthen the eyes.

Beets build the blood and detoxify it; they renew the blood with minerals and natural sugars, and promote circulation. This causes a nourishing and cleansing effect. During the juicing process the nutrients from raw beets remain in a natural form. Pure red beet juice contains many vital nutrients, vitamins A and C, biotin, folic acid, and niacin. Beets are powerful for stimulating digestion.

Broccoli is an excellent source of vitamin C. What stands out in broccoli is its phytochemicals —these are the main reason for the cancer preventing abilities of cruciferous vegetables. They work by preventing normal healthy cells from being converted into cancerous cells. Broccoli is very alkalizing to the body, and it is rich in fiber.

Broccoli contains sulforaphane and prevents mutation in the cells, and it stimulates the body's natural detoxifying enzymes. These enzymes then neutralize potential cancer-causing substances before they have a chance to damage the DNA of healthy cells.

Scientists at Tokyo's Graduate School of Agriculture proved that a class of phytochemicals, known as isothiocyanates, can block the growth of melanoma skin cancer cells.  (Journal— Nutrition and Cancer , 1999.)

The food most likely to prevent colon cancer is broccoli, then spinach. These two vegetables also minimize the risk for cataracts. ( Harvard School of Public Health , October 1999; The American Journal of Clinical Nutrition , February 2000)

Broccoli is at the top of the list in protecting against stroke; it has more vitamin C than any orange and as much calcium as a glass of milk. It is one of the richest sources of natural vitamin A.

Cabbage is rich in vitamin C and helps support the immune system as it assists in carrying wastes from the body. Cabbage juice is known to heal ulcers and helps the body to absorb iron.

The World Cancer Research Fund studies show that cruciferous vegetables lower the risk of many forms of disease. Studies show that indoles in cabbage have a protective effect against breast cancer, colon, and other types of cancer.

Indoles remove potential cancer causing chemicals and carcinogens by directly blocking the carcinogenic process. They work with nutrients which interact with vitamin C in this process to block cancer from starting.

Tomatoes are a rich source of lycopene, an antioxidant carotenoids which is found in high concentration in human blood plasma. Tomatoes also contain high amounts of vitamin C,
beta-carotene, potassium, folic acid, gamma-carotene, glutathione, bioflavanoids, and other phytonutrients that are important for good health.

The Harvard School of Public Medicine and Health, with studies of the diets of over 47,000 subjects, indicate tomato products lead the way in high levels of lycopene. Lycopene protects against cervical and breast cancer, as well as prostate cancer.

Studies going on at research centers show that lycopene could reduce the risk of macular degeneration, the oxidation of serum lipids and cancers of the lungs, skin, bladder, and the cervix. (Gerster, 1997)

Kelp is a natural seaweed mineral that contains almost every mineral and trace mineral needed for human life. It also contains minerals, amino acids, and vitamins from the sea. Kelp is a rich source of iodine, which is very important for the thyroid gland to function properly. The thyroid gland is important as it regulates the metabolism and weight control.

Studies relating to the result of kelp in the diet show lower breast cancer rates, lower heart disease, less obesity, lower rheumatism and arthritis, lower blood pressure, less thyroid disease, less infectious disease, and less constipation and gastro-intestinal problems.
